Meaty Rotini

Ingredients
14.5 oz rotini Pasta
29 oz can tomato sauce
29 oz can tomato puree
5 small mushrooms
2 pounds ground beef
1/2 cup parmesan cheese
4 garlic cloves (2 tsp minced)
1 tsp tarragon
1 tsp rosemary
1 tsp thyme
1 tsp onion salt
1/4 tsp white pepper
Instructions
Start boiling 8 cups of water in a very large pot. (spaghetti size).
While water is warming up, start to cook your ground beef.
While your meat is cooking, slice your mushrooms in 1/8 inch pieces. If you are using fresh herbs, chop them now, along with the garlic.
Once your water is boiling, cook rotini as directed. (about 10 minutes till al dente)
Once your meat is cooked through, drain grease.
Drain pasta, do NOT rinse.
Put pasta back in pot, add tomato sauce, and puree. Add all herbs and spices, garlic, and mushrooms.
Stir, and add meat, stir, add parmesan.
Stir again and cook for 10 more minutes over medium low heat.

Ingredients
3/4 Stick  Butter
1/2 Cup Flour
1/2 Cup Sugar
1 tsp Baking Powder
Pinch of Salt
1/2 Cup Milk
1 Can Pie Filling (your choice)
Instructions
Preheat oven to 400*.
Place butter in 8x8 glass baking dish.
Microwave until butter is melted; about a minute, then in 15 second intervals until done.
In medium mixing bowl, combine all the dry ingredients and whisk until mixed well.
Add milk and whisk until there are no lumps.
Pour mixture evenly into dish. Do not stir.
Spoon pie filling evenly into dish. Do not stir.
Bake for 30 minutes or until golden brown.

Spinach and Artichoke Dip

Ingredients
1 (10 ounce) Package frozen spinach (thawed)
1 Small can or jar of artichoke hearts
8 oz Mozzarella cheese
1 jar Alfredo sauce
Instructions
Chop artichoke hearts into small pieces.

In a large pot over medium low heat, put in all ingredients.

Stir almost constantly until everything is melted and nicely combined. Do not let the cheese burn!!

Serve in hollowed out bread bowl, or fancy glass bowl.

Serve with chips, crackers, or stale bread slices.

Awesome Seafood Dinner

On the menu:
Blackened Tilapia
Shrimp Scampi
Mussels
Veggies with Cheese Sauce

The Blackened Tilapia was so easy to make and requires
only the fish and some common herbs and spices.
I got the recipe here.




The Shrimp Scampi was SeaPak brand. Very tasty.


If you are making this meal for more than two people,
I suggest making it from scratch. Here is the recipe I use.

The walmart brand mussels I got were a great buy.
2 one pound bags for $2.50.


They were very simple to make. You just stab a bag a few times,
microwave for 6 minutes, and viola!! Mussels!!

The veggies were Green Giant brand.
Feel free to pick which ever you prefer.
We used Broccoli, Carrots, Cauliflower & Cheese Sauce.

Tyson Brand Chicken Breast Strips
Minute Ready to Serve Rice
Teryaki Sauce or Marinade

Instructions
Take two containers [one package] of Minute Rice, flavor is your option; I used Brown Rice, and place them in the microwave with bowls turned upside down over them. Set timer for 2 minutes on high. When one lid pops, take that one out and leave the other in till it pops as well.
The directions say to put one in for a minute, but this never seems enough for me, and the rice is still hard.

When the rice is done, take the chicken and split it between the two bowls. Pour about one tablespoon of teryaki sauce in each bowl and microwave for one minute.

Dump one container of rice in each bowl and stir.

Add more teryaki sauce if needed.

Cake:
Dry Ingredients:
1 cup sugar
3 heaping tbsp. cocoa
1/2 tsp. salt
1 tsp. baking soda
1 1/2 cups flour

Wet Ingredients:
6 tbsp. cooking oil
1 tsp. vanilla
1 tbsp. vinegar


Instructions
Cake:
Preheat oven at 350*.
Sift together in an 8×8 pan the dry ingredients.
Make three holes in mixture. Put 6 tbsp. cooking oil in one, 1 tsp. vanilla in second, and 1 tbsp. vinegar in third. Pour 1 cup cold water over all. Stir with fork. Bake for 30 minutes.

While still hot, add your favorite frosting. Eat warm with a tall glass of milk!

3 1/2 cups All-Purpose Flour, sifted
2 1/2 teaspoons Baking Powder
1/2 teaspoons Salt
1 cup Butter or Margarine, softened
1 1/2 cups Sugar
2 eggs
3 teaspoons Vanilla
Instructions
Preheat oven to 400*. Sift flour, baking powder and salt together. Beat butter, sugar, eggs and vanilla in a mixing bowl until light and fluffy.


Slowly add sifted dry ingredients, blending thoroughly. Pinch off small pieces of dough and roll then between your palms to make balls about 1-inch in diameter. Place apart on lightly greased cookie sheet. Press balls of dough down until they are about 1/4-inch thick. Bake 8 to 10 minutes, or until edges are golden. Transfer to wire racks to cool.
